PRICING: Beef pricing is based on the final hanging weight of the whole, half, or quarter purchase. The hanging weight of the animal is the weight of the animal after other parts have been removed. This includes the removal of the head, hooves, hide, and unharvested organs. Once the bones, fat, and scraps have been removed in the butchering process, the remaining weight will average around 66% of the hanging weight.
